Creamy Radish Salad

Ingredients
  

  • ½ cup plain Greek yogurt
  • 1 teaspoon honey
  • 2 bunches radishes trimmed and cleaned
  • ½ English cucumber
  • 4 green onions sliced on a bias (white and green parts)
  • 1 tablespoon fresh dill finely chopped
  • salt and freshly cracked black pepper to taste

Instructions
 

  • In a small bowl, stir together the Greek yogurt and honey until well combined. Set aside.
  • Trim and thoroughly wash radishes and cucumber.
  • Use a mandoline or sharp knife to slice the radishes and cucumber into thin (but not overly thin) pieces.
  • Place radish slices, cucumber slices, green onions, and dill into a large mixing bowl.
  • Pour the yogurt dressing over the vegetables and gently toss to coat everything evenly.
  • Add salt and freshly cracked pepper to taste.
  • Serve right away or chill in the refrigerator for about 10–15 minutes to enhance the flavors. Enjoy!

  • A mandoline helps you get uniform slices, improving the salad's texture.
  • For added tanginess, incorporate some fresh lemon juice or a little apple cider vinegar into the dressing.
