Cowboy Casserole is a filling slow cooker recipe made with ground beef, corn, cheese, and tater tots. It’s budget-friendly, kid-approved, and ideal for busy weeknights.
10.5ouncescondensed cream of mushroom or cream of chicken soup, 1 can
½cupsour cream
1½cupsshredded cheddar cheese mild or medium
1small onion diced
1teaspoongarlic powder
salt and pepper to taste
20ouncesfrozen tater tots 1 bag
Instructions
Brown the ground beef in a skillet over medium heat, breaking it apart as it cooks. Drain the grease and set the meat aside.
Spray a 6-quart slow cooker with nonstick cooking spray. Add the browned beef, corn, condensed soup, sour cream, shredded cheese, diced onion, garlic powder, salt, and pepper. Stir well to combine.
Spread the frozen tater tots in a single layer on top.
Cover and cook on Low for 4–5 hours or High for 2–3 hours, until the mixture is hot and bubbly and the tater tots are tender.
Optional: For a crispier top, transfer to an oven-safe dish and broil for 2–3 minutes, watching closely.
Serve hot.
