Watermelon Salad with Balsamic Glaze and Feta
If you’re looking for a light, refreshing salad that’s packed with flavor, Watermelon Salad with Balsamic Glaze and Feta is the perfect choice! The combination of juicy watermelon, tangy feta cheese, and a sweet, rich balsamic glaze creates a delicious contrast of flavors and textures. It’s the ultimate summer dish—fresh, vibrant, and so easy to make!

This is a great salad with sweet and savory flavors. The watermelon is juicy and bright, the glaze is sweet and earthy, and the feta is tangy and delish! Whether served as a side dish for barbecues, a refreshing lunch, or an elegant appetizer, this salad is a guaranteed crowd-pleaser!
I love taking this salad to potlucks. It’s familiar enough for kids (who doesn’t love watermelon!) and it also appeals to adults. Plus, it’s great on a hot day!

Ingredients
For Balsamic Glaze:
- Balsamic vinegar
- Honey – You could also use granulated sugar.
For Salad
- Seedless watermelon – You’ll want to dice the watermelon so that it’s easy to eat. Think 1-bite cubes.
- Mixed baby salad greens – You can use any kind of greens. I like a mixture of sweet and bitter greens. Radicchio adds lovely color to the mix, or just grab a bag of pre-washed lettuce. It all works.
- Fresh basil – Fresh basil is important, dried just won’t have the same flavor. To slice basil, stack the leaves then roll them up like a cigar, then slice across the short side. This is a cheffy trick called chiffonade, and it makes nice thin slices.
- Crumbled feta cheese – I have also tested this recipe with queso fresca. As long as it’s a crumbly tangy cheese, it’ll work!
- Salt
- Pepper

How To Make Watermelon Salad with Balsamic Glaze and Feta
- Combine the balsamic vinegar and honey in a small saucepan over medium heat. Bring to a gentle simmer and cook for 8-10 minutes, stirring occasionally, until the mixture reduces by half and reaches a syrupy consistency. Remove from heat and let cool.
- Layer the mixed baby greens and cubed watermelon in a large serving bowl.
- Sprinkle with salt and black pepper, then gently toss to combine.
- Top with crumbled feta cheese, then drizzle with the cooled balsamic glaze just before serving.
- Serve immediately and enjoy!
Step By Step Process

Chef Jenn’s Tips
- For the best texture, use ripe but firm watermelon to prevent it from becoming too watery in the salad.
- You can buy premade balsamic glaze that’ll save you some time.
- Swap out the basil for fresh mint for a different twist on this salad.
Make It A Meal
Watermelon Salad with Balsamic Glaze and Feta is refreshing on its own, but pairing it with a protein or grain makes it a more satisfying meal. Serve it alongside grilled chicken, shrimp, or salmon for a well-balanced dish, or pair it with quinoa or couscous for added texture and heartiness. For a complete summer-inspired spread, enjoy it with a side of crusty bread or a chilled soup!

Storage
This salad is best enjoyed fresh, but if you have leftovers, store them in an airtight container in the refrigerator for up to 1 day. To keep it fresh, store the balsamic glaze separately and drizzle it over the salad just before serving.
